Baking || Peanut Butter Muffins

If like me you're a fiend for anything sweet and peanut buttery, these will definitely be you're kind of thing!

Ingredients:
300g Self-Raising Flour
1tsp Baking Powder
200g Milk Chocolate Chips
115g Soft Light Brown Sugar
2 Eggs (beaten)
200ml Milk

You will also need:
2 large bowls
A sieve
A jug
Scales
Muffin tin
Muffin cases
Something to mix with (I always opt for any electric mixer because I'm lazy)

Step One: as always is pre-heat your oven, to 200C/Fan Oven 180C/Gas Mark 6 and line your muffin tray

Step two: weigh out your flour and measure out the baking powder and sieve these together in the first bowl then add around 2/3 of the chocolate chips

Step three: in the second bowl mix together the peanut butter and sugar, then gradually mix in the egg and milk until you have a smooth mixture

Step four: mix together the wet and dry mixtures until just combined and place large spoonfuls into the muffin cases. Before putting them into the oven sprinkle some extra chocolate chips on top for some extra cheeky chocolatiness

Step five: bake in the oven for 15-18 minutes until risen and golden, leave to cool and enjoy!
