Recipe:
Cake:
8oz Butter
8oz Sugar
8oz Self-raising flour
4 Eggs
2 heaped tbsp of Cocoa Powder
Icing:
150g Butter
300g Icing sugar
100g Chocolate chips
A splash of milk
1tbsp Mint flavouring
1.5 tsp Green food colouring
Chocolate covered popping candy (optional)
Preheat your oven to 180 degrees and thoroughly grease to cake pans
Mix together all the cake ingredients in a bowl and then divide between the two pans
Bake for 20-25 minutes until the cake is cooked all the way through. A handy method to check by is once the cake starts to come away from the pan.
Leave the cakes to cool. Whilst they are you can get started on the icing. Start by chopping some chocolate so you have some larger and smaller pieces.
Mix together the butter and icing sugar and add a splash of milk. Once these are creamed together pour in the chocolate chips and mix in, after this mix in the colouring and flavouring.
First spread the icing on the top of the bottom layer. Then sandwich the cakes together and work on the rest starting on the top and working round the sides. I finished of by adding chocolate covered popping candy for an extra special touch.
